Creamery Production Manager, Department of Food Science
The University of Tennessee is seeking applications for the position of Creamery Production Manager in the Food Science Department. This is a full-time, staff position to develop, launch, and manage a new dairy processing operation in the Food Science Department. The Food Science Department is a diverse blend of scientists and engineers contributing to the land-grant mission of the university. A new UT Creamery store located in the former Visitor's Center on Neyland Drive will be the retail outlet for products produced by students and staff in the Department. The Department has approximately 80 enrolled undergraduate students pursuing bachelor's degrees with concentrations in science and pre-professionals well as approximately 30 graduate students pursuing MS and PhD degrees. Extension programs focus on food processing and food safety. The Department is housed in both the Food Safety and Processing Building and the Food Science Building. Its 16 faculty members and 11 professional, support, and clerical staff on the Knoxville campus currently accomplish diverse activities in food science. This dairy processing operation will employ students to provide experiential learning in undergraduate curriculum and graduate research, creative achievement, and real-world experience.
The Creamery Production Manager position is a full-time staff appointment responsible for launching a new dairy processing operation in the Food Science Department, strategic oversight and operation of all aspects of the dairy processing operation including: fiscal management, hiring and managing staff and student employees, developing operational plans and scheduling production, maintaining a food safety plan and sanitary facilities. The Creamery Production Manager reports to the Department Head to achieve the goals and objectives of the new dairy processing operation. A key aspect of the dairy processing operation is to provide experiential learning for students in the Food Science Department.
Duties and responsibilities include: *Develop, plan and launch the new dairy processing operation in the Food Science Department; *Development of a strategic plan for the new dairy processing operation; *Manage all aspects of the dairy processing operation and facilities and effectively maintain and utilize resources including personnel, equipment, and materials to produce quality dairy products; *Supervise staff including hiring, training, and scheduling. Evaluate performance and ensure adherence to University policies for all staff and students employed in the processing operation; *Maintain the highest standards of sanitation and compliance with all food safety regulations, including maintaining all permits and licenses required by FDA or TDA; *Administer budgets and make financial reports and projections to the Department Head; *Maintain financial self-sufficiency of the dairy processing operation; *Effectively communicate to the Department Head and external constituencies (including university administration, alumni, food and agricultural industries, state and federal agencies, and professional organizations), the goals and mission of the operation; *Foster an environment of collegiality, teamwork, diversity and respect for multicultural and multi- disciplinary settings; *Interact with faculty, students, stakeholders and the Department's Industry Advisory Group to determine priorities; *Maintain skills and knowledge by participating in continuing education and professional development activities.
