Unit Manager Catering University Housing - Dining Services
Job Summary Responsible for managing all catering activities of the University of Illinois Dining Services University Catering. This includes the Executive Program, Catering services at Illini Union, Illinois Conference Center, and Off-premise venues. Duties & Responsibilities
Leadership and Supervision
Provide direction, leadership and strategic objectives for a diverse multi-unit operation.
Manage a large and complex staff with a wide range of knowledge, skills and abilities consisting of union staff represented by four labor unions and non-union staff.
Understand, respect, and value the diversity of the workforce, customers and constituents of University Housing and Dining Services.
Actively promote a positive work environment and department image.
Establish rapport with clients and assist in the planning, development and execution of custom events. Supervise and guide service standards provided to students, guests, parents, faculty and staff.
Establish expectations and model professional communications with students, parents, guests, staff, and campus partners.
Manage emergency protocols related to building and staffing emergencies. Serve in a crisis management role as needed.
Supervisors will engage and implement University Housing's diversity, equity, and inclusion initiatives.
Operations
Supervise, review and manage inventory, storage and distribution for University Catering beverages, food and supplies.
Coordinate with planners, chefs and front-of-house operations to ensure a cohesive operation with high standards and customer experience.
Monitor compliance with all health department, HACCP, OSHA and University policies and procedures. Develops systems to oversee sanitation, health code compliance, maintenance and repairs.
Remain apprised of new concepts, practices, theories, trends and issues in the food service industry and institutions of higher education.
Assess anecdotal and performance data from various sources and establish continuous improvement in processes and programs.
Financial Management
Coordinate with the Assistant Director of Catering and Retail to create and implement the operational budget for University Catering.
Coordinate with the Assistant Director of Catering and Retail to develop short term and long-term financial reports for operational areas.
Provide operational guidelines for staffing operations to ensure fiscal responsibility.
Review and suggest best practices and improvements for revenue generation with consideration to daily operations.
Assist with the direction for catering brochure in multiple locations with consideration to fiscal responsibility, sustainability and the customer experience.
Human Resources
Conducts performance evaluations for staff, coach and mentor for professional development to build and strengthen the quality of personnel working for University Housing Dining Services.
Communicate and provide leadership and direction for personnel to ensure programmatic benchmarks, goals and objectives are clear and followed through on.
Work with departments to provide feedback and guidance to ensure that best practices are established and in compliance with federal, state and University policies and procedures.
Actively uses the PPP program to guide the performance of staff.
Makes recommendations as to most efficient use of personnel.
Assists in interviewing and evaluating job applicants.
Minimum Qualifications
1. High school diploma or equivalent.
2. Any one or combination totaling six (6) years (72 months) from the categories below:
A. Coursework in business, dietetics, culinary arts, food science, nutrition, hospitality, hotel, catering, restaurant, or institutional management, or a closely related field as measured by the following conversion table or its proportional equivalent:
90 semester hours equals two (2) years (24 months)
Bachelor's Degree (120 semester hours) equals three (3) years (36 month) equals
B. Food service management work experience.
Preferred Qualifications
Food service management work experience. Event planning experience.
Knowledge, Skills and Abilities
Strong computer skills.
Skills in decision-making, independent judgement, initiative and leadership.
Knowledge and understanding of University Housing Dining Services policies and procedures.
Ability to apply sound fiscal management methods.
Supervisory ability.
Ability to work in an environment with diverse staff and students.
Illinois Serv-Safe Sanitation certified.
Knowledge of food service and culinary practices and principles.
Appointment Information
This is a 100% full-time Civil Service 0038 - Food Service Administrator III position, appointed on a 12-month basis. The expected start date is as soon as possible after the close date. The salary range for this position is $55,000 to $59,937 and salary is commensurate with experience.
